As I write this, I’m in an apple caramel heath bar coma. Seriously, I can’t move. So I figured although I feel too sick to move, I can still share this fabulous recipe with all of you. Although my family and friends know I have a weakness for chocolate desserts, apple desserts also hold a special place in my heart. The only thing I dislike about most apple desserts is peeling and chopping the apples. I was thrilled when I saw this recipe only required one apple…one! Needless to say, I’ve been dying to make these. Finally tonight I had some free time. As soon as I came home from work, I immediately turned on the oven, only to find out I didn’t have the FIRST ingredient in the recipe…butter. MAJOR fail. After quickly picking up butter and brown sugar down the street, I whipped up a batch of these blondie bars. So easy, so tasty, SO fall.
Plus…to make them even better, they’re frosted! This was my first time making frosting on the stovetop and I’m already obsessed…perfect consistency and a brown sugar taste. Brown sugar frosting? Yes please. Make these now!
Apple Caramel Heathbar Blondie Bars
2/3 cup room temperature butter
2 cups packed light brown sugar
2 tsp vanilla
2 cups flour
2 tsp baking powder
1/2 tsp salt (optional)
1 cup peeled, chopped tart apple (1 large–I used a granny smith)
1/2 cup toffee bits ( I used heath bar)
1) Preheat oven to 350°
2) Spray 9×13 baking pan lightly with cooking spray.
3) Cream butter and brown sugar in mixer until smooth.
4) Add eggs and vanilla and beat on medium until combined.
5)On low, add flour, baking powder, and salt. Mixing until just combined.
6) Stir in the chopped apples and toffee bits until evenly distributed.
Spread in prepared pan and bake for 30 minutes until the center is set.
Let cool completely before slicing or frosting. ( I am so impatient at this part!!!)
Brown Sugar Frosting
1/2 cup butter
1 cup packed light brown sugar
1/4 cup milk
2 cups powdered sugar
1) Melt butter in a medium saucepan. Add brown sugar and milk and bring to a boil.
Remove from heat. Let cool for 5 minutes. Stir in powdered sugar with a whisk.
Let cool until it thickens enough to spread. Stir before spreading on top of blondies.
Let frosting set for 30 minutes and then cut into bars.
